What statistical test should I use? (dietary diversity, nutritional knowledge, etc)

Hi all! Complete statistics amateur here so I apologize in advance.

We have collected a lot of survey data from project participants at baseline and exit, without a control group to compare to (I know, I know, but lacking in resources). Below are some examples of the type of data collected:
  • dietary diversity (number of food groups consumed in last day)
  • nutritional status of children (number of standard deviations from normal height and weight for age z-scores)
  • nutritional knowledge score (% out of 100)
  • number of vegetable types grown

My question - without a control group, what statistical test could I run to compare two variables at a time and look for correlation. For example, is there a way I could look at the change in number of vegetable types grown from baseline to exit, compare that to change in dietary diversity from baseline to exit, and see if there is a possible correlation between the two?
