Come to think of it, there's three answers for the same puzzle:

pig--- (1) is cutlet

pig--- (2) is pork chop (or pigeon hole, per Denis)

so if I understand (trying to get how these rebus's work)

cutlet is derived from the face that you "cut" the let from piglet?

Start with six-letter words that fit the template pig--- (eg: pigeon, pigpen, piglet, pigsty, …).

Then find something having to do with the missing letters.

Other examples:
