and

3x^2 - 3y^2
_______________
5x^2+5y^2-10xy

Please let me know how to solve this:

x+2 -3(x-1) = 7 - (x+3)

Use FOIL to get

x+2 -(3x - 3) = 7 - (x+3)

Simplify and collect similar terms and solve.

3x^2 - 3y^2
_______________
5x^2+5y^2-10xy

There is nothing to "solve" here - you do not have an equation with "equals to" sign (=).

However, you can simplify the expression by factorizing the numerator and the denominator and eliminating common terms.
