If it takes 5 people 3 hours to pack 1000 pieces, how many pieces can one person pack in 3 hours (assuming all 5 people work at the same rate)? So how many can one person pack per hour?

I would do it exactly like HallsofIvy did.
Here is another way of thinking about it.
How many people-hours did it take to pack the 1000 pieces? The answer is the same as the answer to this question: (assuming they all get paid the same rate) How many hours does the boss have to pay the workers in total to pack the 1000 pieces? The boss could have hired one person to work all those hours to pack the 1000 pieces.

I use the units for these types of problems, really helps a lot.

[MATH]\frac{5 worker * 3 hours}{1000 pieces} = \frac{15 worker*hours}{1000pieces} = 0.015 \frac {worker*hours}{pieces}[/MATH]
[MATH]100pieces*0.015\frac{worker*hours}{pieces} = 1.5\frac {pieces*worker*hours}{pieces} = 1.5 worker*hours [/MATH]
