When I have 10x3y5, is the degree is 8th degree? Because I heard that for monomials, the degree is the total

Correct. For a monomial, the degree is the sum of the exponents of the variables.
 
Yes the degree of a product is the sum of the degrees of the individual factors.

Why does that make sense?

We are considering [MATH]10x^3y^5 = 10 * x * x * x * y * y * y * y * y.[/MATH]
That is a product of a known number and and eight additional factors.
